Bread was the staple of their diet. It was baked in every "khata" (peasant house), but always accoding to a specific original recipe and technology. The vat in which the dough was mixed had to be made of oak. The top of it was covered with something warm, and people would even use their fur-coats and sheep-skin jackets to insulate the dough as it rose. To add a special fragrance to their baked goods, bakers would place cabbage, oak, maple, reeds, or horseradish leaves to the oven.

Cheese and Butter

To make cheese, butter, and other dairy products, various tools and utensils were used.

This process of making these products was drawn out and arduous, and was considered women's work. However, the smoking of meat, sausage, and bacon had always been considered men's work, as was, of course, the threshing of grain.
